This machine for PROFESSIONALS IN THE PIZZERIA AND BREAD-MAKING SECTOR, specially designed for high-hydration doughs, incorporates all the features that brought the great success of the 3000 series: •New 50-litre bowl with a considerably enlarged rounded lower edge. •New whisk precisely shaped in relation to the rounded edge of the bowl. •New dough breaker, sturdier still, mounted at an angle to the front of the machine, adjustable in the cutting angle of the dough, in height and distance from the whisk. • Uprated whisk drive with a 2.2 kW motor that makes it possible to reach a speed of 238 strokes. • Whisk speed 119 in 1st gear and 238 in 2nd gear, with bowl speed continuously adjustable from 5.2 to 14, for high-hydration doughs. • Temperature probe in contact with the dough, housed in the dough breaker, with an alarm threshold. • Inverter driving the bowl motor for precise control of the number of whisk strokes (varying the bowl rotation speed noticeably changes the number of whisk strokes on the dough). • Colour touch screen display and PLC (computerised control) for the entire management of the machine, allowing manual or automatic operation with timed control of the two whisk speeds, adjustment of the bowl speed with timed reversal, real-time display of the dough temperature with a settable alarm threshold and full diagnostics. • LED lighting of the dough controlled from the display. •Storage and intuitive management of over 200 recipes, which allow quick setting of the machine for working different products (pan pizza, tray pizza, pala pizza, etc.)
